Ingredients
1/4 cup cider vinegar
1 Tbs honey
1 tsp Dijon mustard
1 tsp cornstarch
1/4 tsp salt
1/4 tsp black pepper
1 Tbs vegetable oil
1 (14 oz) pkg Polska kielbasa, cut into 1/4-inch slices
3 cups Simply Potatoes® Diced Potatoes
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1/2 cup beef broth
3 cups green cabbage, sliced
Directions
  1. In a small bowl, stir together the vinegar, honey, mustard, cornstarch, salt and pepper until smooth. In a large skillet over high heat, add the oil. Add the kielbasa, potatoes and bell peppers. Sauté for 5 minutes or until kielbasa is lightly browned.
  2. Add the beef broth. Bring to a boil. Turn heat to low. Stir in the cabbage. Cook for 1 to 2 minutes until slightly wilted. Stir in the vinegar mixture. Cover, and cook for 4 minutes.
  3. Turn off the heat, and keep warm until ready to serve.
